Unfortunately the free upgrade time has passed. You have to buy Windows 10 now. Given that you have Win 7 Ultimate you'll probably want Windows 10 Pro.

My recommendation is that you backup your data, do a fresh install of Windows 10, then move your data back to you computer.

However, if your want to upgrade there is the "upgrade" option when you launch the Windows 10 installer. While the upgrade will probably be fine I've seen things go screwy after an upgrade or downgrade.

I assume that the "ultimate" grade has been abandoned. I'm probably the only sucker who bought it :)

Yeah, the name was abandoned with Windows 10. But don't worry about being a sucker. I had Ultimate too and I have Windows 10 Pro. lol ;-)
