How to set WIndows 10 from automatice update to manual?
Hi Experts,
I need to set a ton of windows 10 machines (some virtual some physical) from auto update to manual because their work is left until the next day and low an behold windows 10 decides to auto update and reboot. This is a major hindrance. How can I change it?

I did it through disabling the windows update service but now it is permanently off. I still need to manually update it.
Use Group Policy this will control Windows Updates.

Disabling Windows Update services will permanently disable the service from running manually or otherwise.
Again, here are your options:

I assume you have a domain network. If so, you can achieve this two ways: a) through GPO (Computer Configuration > Administrative Templates > All Settings > Configure Automatic Updates) and click Disable, or b) use a RMM tool, which would then manage Windows Update remotely & centrally.You never confirmed if your on a domain network or not and how many machines you need this on.
If you are running in a workgroup you can achieve the same thing in as above but use the Local Computer Policy of the Windows client.
I Highly advise that you instead take advantage of the new group policy "Active Hours"

I can't have active hours...its bs. users are loosing their work because Microsoft is ridiculously intrusive and offers minimal controls for windows update. I HATE them right now!
I have about 5 in a workgroup and about 40 in domain network that require this change.
