Does anyone know how I can add and edit user meta data without going through phpMyAdmin?

Thanks

Do you mean through WordPress directly or just using another database tool - what is it you want to achieve?

Through WordPress.  Something from the dashboard.

A google search yielded the following results

https://wordpress.org/plugins/user-meta-manager/
https://wordpress.org/plugins/user-meta/

Do these fit your requirements?

User Meta Manager seems to be exactly what I want , but after trying twice to pay $30 for the pro version (the free version only supports 100 users)  I got no email or links to download the software (the taking-my-money part worked fine, though, twice).  I’ve tried submitting tickets but get no response. The author's own site, jasonlau.biz, seems to be totally broken.

User Meta is focused on allowing front end log in, providing forms, etc., for the log in information. That’s not what I'm looking for.

The limit on users seems to be here
user-meta-manager.php Line  882, 987 and 1030

The license at the top of the file says
This free version of User Meta Manager is free software; you can redistribute it and/or modify
 * it under the terms of the GNU General Public License as published by
 * the Free Software Foundation; either version 3 of the License, or
 * (at your option) any later version.
Which means you can modify this file as you wish.

Change the number of users to whatever you need and give it a go.

Just a follow up.  The developer of User Meta Manager finally contacted me and we sorted out the problem. I looks like it was related to the way my multisite was set up.  When I deactivated the Network Activate and just activated User Meta Managerfor the sub site I wanted to use it on, it worked.
