Exchange 2016 auto accepting room bookings

Hi guys! (I've just joined)
I have Exchange 2016 CU3 running and when users booking meeting room resources the auto accept response as well as updating the calendar takes between 7 to 15 minutes. Delivery times for mail seem fine so I'm not sure its network related.
I'm really stuck as to where to start to trouble shoot this.. Any help would be greatly appreciated.
