Took a good few hours to install each CU.

First off, what do you mean by this?  You are aware that you only need to install the latest CU and that you do not need to install each CU, right?

How long to uninstall using add/remove programs?

Should not take more than 45-60 minutes per server.  It only removes the AD schema extensions if the last Exchange server is being removed.

LOL. Of course Todd - I meant each time we install a CU it takes a long time. Aware that each one is complete!

45-60 mins. OK better than the install then. But of course it does remove the server being uninstalled from ADSIEdit. Or it should.

Yes, an uninstall of Exchange will remove the server from the Exchange organization.  After, it should not be present in ADSI Edit.
