Hi,

Apart from colour categories, do you know any way to automate colour emails (incoming email messages) on Office 365 based on a specific sender for example?

In OWA? No, not really. For Outlook you can create rules that highlight the message with a particlar font/color, but in OWA you are limited in the types of action you can use for rules. Perhaps simple rule to move messages to (sub)fodler will be best?
