We currently have an Exchange Server running MS Exchange Server 2013. We have a backup solution in place where backups are taken daily and weekly. The take screenshots as well but some of the screenshots for the EX Server have failed. We were told that we could set some of the services of the EX server to have a delay start upon startup and this would fix the problem. I would like to know which services we could set to have a Delayed Start instead of Automatic upon startup without causing any problems?

Answer is none. You better ask backup vendor to fix backup too. I am not clearly what do  you mean by screenshot. If you are taking VM snapshot, stop doing it.
