Best way to virtualise a remote Linux server

I have a RedHat and a CentOS server I want to virtualise and put into our Hyper-V environment.

My only experience has been using Windows server where Ive used sysInternals P2V tool to create a VHDx and then I just mount the drive boot up and "usually" it works (after installing drivers and syspreping).

What is the best way to create a VHDx from RedHat and CentOS?

"just copy the files" surely this wouldnt work, or is it cause Im a Windows kid that I think this wont work :-S

What do I need the same? Just the OS or do I need everything the same, as the server is quite old now so trying to find the same OS version might be difficult.
