Changing a user name - will it affect what someone sees when they get mail from that person?

Small domain running SBS 2011 essentials at a church that's using o365 for email for the users.  there's an account youthdirector@church.com.  The user is jane doe.  When she sends mail from youthdirector email address, a user on the network says it has her name on the from line.

Jane has left and the new user, sue is now logging in / sending mail from that same youthdirector@church.com account.  That user says he's still seeing jane doe's name.

Im thinking we can change the name of the user in the SBS wizards / AD.  But does the user name get sent with the email address? Or is it that the receiving user has a contact card for jane doe with the youthdirector email address and outlook on his machine is using that name from that contact card?

While changing the username on the SBS server / domain, we also have to change the contact card on the user's machines, right?

I would look under suggested contact in o365 and see if that old contact with the old user name still exists.

so the name = email association is on the receiving machine, right?  no way to override that from the sending email, right?  Each person getting emails have to change / correct the contact card / suggested contacts?
