I ended up resolving it, I discovered the SSL certificate hadn't been binded properly in IIS.<br />

HI, Our SSL certificate (godaddy) expired today. So I renewed it. Done it loads of times before.<br />
I renewed via the EAC, all went through fine with godaddy and uploaded the exchange certificate back onto our server via EAC and MMC certificates module.<br />
outlook still wouldn't connect, and now the EAC says<br />

Turn on TLS 1.0, TLS 1.1 and TLS 1.2 in advanced settings and try connecting to the local host.........<br />

Previously when outlook wouldn't connect, OWA was working. This isn't working now.<br />
