Record all activity all day, and recycle storage at end of a certain number of days
What is the best software for making this happen, on a per pc basis
What do you mean by "all activity"?
1) All the typing on keyboard?
2) The integrated microphone?
2) The integrated webcam?

Record all activity...Seriously, what is "all activity"? Activity of what? Activity of printers? Activity of memory? Of disk drives? (Record it where? If you log all activity of disk drives, do you really want to store the logs on disk... so that every time a log record is written to disk, the logging program logs another disk activity record to disk, which causes that disk activity to be logged to disk, etc.?)
Some clear description what "activity" means is needed. There are many, many "logging" functions. If any might be "best", it will depend on what you think is "best" for you. What's best for you might be terrible on a different system.

you did not answer my Q "is the user allowed to see that he's been monitored?"

I could save to Amazon cloud drive perhaps. Yes, the end-user in this case would be me and I would have no issues with a message alerting me to the fact that I was being monitored.

I guess you mean to monitor your computer to see who else touch something on it, which means a close circle of persons as family, close friends/colleagues or whoever have access to it or is in the house/office.

Not at all. The purpose of the recordings is to have video that I can edit, and save clips from, for the purpose of creating instructions. They should roll off after a day or two and not save more than 48 hours. Then when I want to illustrate or mark something for illustration purposes, then I can clip that section and save it separately.

Thanks for the suggestion. I just downloaded a trial of Camtasia. I have been avoiding that purchase for a long time due to the cost, but am considering it now for this purpose.
However, I do not see how to set it to automatically record all activity that it sees?
How do I make that part happen?
The amount of time could be adjusted if it takes up too much space. Mostly, I would want to record without audio, then mark-up, and or create a new audio overlay.

OK, so from what I am seeing so far, the mp4 format is the most compressed format for making automated screen recordings. If I want the mp4 function, deskshare pro costs $99.
If I want clipping ability, text overlay, highlighted mouse movements etc, all of this is included.
The audio overlay though might not be there. Still checking. If it is, this may be better for this purpose than camtasia studio since it has the auto-recording and highlighted mouse movement features. It is also cheaper.
