Change date and time to timestamp in Libre CALC

I have a cell with the date and time.  However, when I open the sheet the next day all dates change to current date.  What I want to do is either have a timestamp entered in another cell D1 when the day and time in C1 is entered.   Or - have a formula that timestamps instead of one that adds date and time so when I scan RFID chip number in A1 it time stamps in D1.

copy the cell with the function "=TODAY()"

use Paste Special ―> Values Only with the option Text selected

the next time you open your spreadsheet, the cell with the value "=TODAY()" will change for today's date, but the copied cell will have the last value used when Paste Special was used

Does this mean I would have to do this for each cell as I have 1000?

I am scanning in RFID cards and this happens all day - people come in and out and scan each instance - and the time and date are recorded.  I dont get the data at the end oc the day, but at the end of the week.
sorry for the delay...

it seems to me that you need a special function that will change the TODAY() function and place into a different cell every time someone opens the document to scan each instance

i am familiar with Libreoffice Calc, but i don't really use it that much.

This isnt the same but it works - add =IF(A1 =" ", " ", IF(E1=" ", NOW(), E1))
