We are trying out office 365 tasks for follow up of projects
Advantage : you have an overview of all projects and leads of the projects
Disadvantage : it does not seem detailed enough for project follow up.
Is there any related tooling that we could use ?

Did you check Planner? https://support.office.com/en-us/article/Get-started-quickly-with-Microsoft-Planner-4a9a13c6-3adf-4a60-a6fc-15c0b15e16fc?ui=en-US&rs=en-US&ad=US
Are you using Project and publishing to a SharePoint project site? Have you checked out the Project Online service? For team members, it's not spendy ($7/mo). For managers who can handle the real thing, it's a bit more. But it could be worthwhile if it can keep a project on time and on budget.

I would have to agree with Jeffrey. Even Outlook, when used with Exchange server, allows you to delegate and follow up on tasks. And MS Project is best described as a mash-up of Excel, Access, and Outlook. A steep learning curve for project managers who've never used it.
