Deleted Exchange server causing problems in Outlook

An old Exchange 2013 server has been deleted (the vm) by mistake.  It didn't contain anything important.  All mailboxes are stored in another Exchange server.   All connectors are using the new server.  

But users in Outlook are experiencing problems, Outlook is crashing or keeps asking for a password (users click on cancel but it's annoying)  

How can I remove all path to this deleted server?

It's hard to say what have left, maybe RSS or Journal or something else.
Did you try to create new Outlook profile and setup connection only to New Server ?
Is this error still occurs ?

Yes I've created a new outlook profile (and the user is now connected to the new database and it works with OWA)  But as soon as I try to add the new profile in his outlook (locally so it shouldn't prompt for a password and and if I enter the password it doesn't work anyway)  the login password window keeps prompting.  

How can I wipe all information everywhere on the old deleted exchange server.  The VM has been deleted so the Exchange has not been uninstalled correctly, that's why I suspect Outlook tries to reach this server.

Removing Exchange server by mistake? Whoever is your admin for VMware need more training. In your situation, you better rebuild old server with recoverswitch. Follow this KB:

Once recovered, you them decom it properly.
