Activation for Microsoft Office for Mac 2016
Is there a process of creating an installer of Microsoft Office for Mac 2016 that you can install that will bypass signing into your Microsoft account and a way to insert an activation code into the installation on imaged Macintosh computers?
It depends upon the licensing model of the product. Full retail product has a product key. which for an imaging scenario must be a VL product using either a MAK or KMS key.
Office Personal requires the person that purchased the product use their MIcrosoft Account to Activate. Using the same Microsoft Account will cause licensing problems.
O365 for business/enterprise will use the assigned users email address

There is no way to skip the sign in as the licence is on a individual basic binding to your MS account.
