Multiple MPLS Circuits Connecting to LAN

We currently have an MPLS network connecting 7 company sites and an internet breakout at a DC based in South West UK. We are currently in the process of moving our MPLS circuit to a new supplier and I have been asked to ensure the switchover has the least impact on the business possible, our new internet breakout will be at our own HQ.

Our current Cisco MPLS CE router connects to a HP layer 3 switch and into our private LAN, there is also a layer 3 HP switch at each remote site. Once the new MPLS circuit is live I plan to also connect the new Cisco CE equipment into the same switch (different CE interface IP's), then move each individual branch over site by site by pointing the new routes through the new CE interface gateway IP & vice versa at each remote site.

The only issue I have is that each of our VM's on our internal network has a default gateway pointing to the old CE interface gateway and not the new IP, therefore even if I change the routes on our layer 3 switch to send traffic over the new circuit the servers will still be pointing to the old interface IP. I have to do this work during working hours with minimal impact on the business, I'm concerned as to how I'm going to move individual sites over whilst still sending some traffic out across the old circuit to serve sites that have yet to be moved.

I would appreciate some feedback on what the best solutions could be.

I think I may have found a potential solution. If I change the default gateway of all VM's to point to the VLAN gateway (HP switch) rather than directly at the current MPLS CE interface IP, as sites come across to the new MPLS I can change the routes on the HP switch to send traffic over new circuit whilst keeping the routing the same for other sites that haven't come across yet (default gateway still the HP switch, however static route pointing traffic towards old MPLS CE interface).

I'm still open to any better suggestions.

Luckily, all core services are hosted at one central location (not ideal I know) therefore in this situation it makes the routing changes fairly simple and I don't really need branch to branch communication.
