You can't sniff it unless someone sends it to the AP. Is there a config backup? If so, try to decode the password if it's a type 7 password.

I need to factory default a Cisco 121 WAP as I don't know the password.<br />
The problem is that they are all boxed into ceilings!!! and I am unable to physically access them.<br />

I can get to the webpage of each one. I have tried all the Cisco default passwords that I can find with a Google search. <br />
