AD contact email address not showing up in GAL

I have added several contacts to AD but for some reason when I select the contact from my GAL in Outlook, their names appear but they have no email address associated with them. They just show as "Firstname Surname <>".
I added the email address to the mail field and checked it in the attribute editor.
We have a Exchange/O365 Hybrid solution.

AD Users are only added to GAL if they're enabled as either one of these:
- Mailbox user with mailbox on on-prem exchange
- RemoteMailbox user with mailbox in office365
- Mailcontact a contact object with either internal or external email address, but have no login
- mail user an AD user with a external address

adding email address to AD object will not shown in AD

Jakob Digranes, these users are Mailcontact users. They are set up as contacts only with their name and email address added. There are other contacts in the list that were there before I started at the company which work, i have replicated these users and added the new users information but for some reason the email address doesnt show up for the new people. I know its only a knowledge issue on my part as there is proof that it works but I need to know what I am missing.

Ok

one out of 2 things.
1. The offline address book doesn't get updated
or
2. the offline address book is updated, but not downloaded

Try to see if the contacts are present in address lists in either Outlook Web App (Webmail) or when running Outlook in Online mode. The offline address book is only used for Outlook in cached mode. If the users are present in webmail, go to Outlook - Send Receive menu and choose Send Receive and choose address book. if this works OK - but users are not present, log on to Exchange and use the following command

get-offlineaddressbook | update-offlinaddressbook
