When PIM sparse mode is configured it automatically create a tunnels to the RP.

What happens if you were to assign the IP of the tunnel accidentally somewhere else?  Would PIM reIP the tunnel, or will it break?

If you configure IP address accidentally somewhere else - you will always have potential routing problem. In any case there should be no duplicated IP addresses ever.
But, regarding multicast - you need to configure pim under interfaces that will participate in multicast routing along assigning IP address (configuring IP address somewhere will not make multicast problem by itself).

Multicast is always checking reverse path, if path to the source is not according to routing table multicast will be broken (this can be consequence of incorrect IP address accidentally configured somewhere).
