Maintain demoted SBS2011 as stand alone server
We are currently in the process of migrating our SBS2011 to a bunch of standalone 2016 servers (AD, Exchange 2016, Sharepoint, SQL).
Overall things are progressing nicely and we are about to remove AD services from the machine.
However we are considering maintaining the server as a stand alone machine, at least for the mid term, as it is hosting a slew of other services / server software (for instance it hosts an old instance of MS Navision which we use as archive but still have to mantain).

And we shall definitely decommission completely said server... but can we reasonably maintain it as a stand alone machine for some time ?
After you uninstall Exchange Server and demote the Source Server, it is not in a healthy state. If you want to repurpose the Source Server, the simplest way is to reformat it, install a server operating system, and then set it up for use as an additional server.

Ok ok seems we will have a migrate all our services and decommission that server asap

SBS is going out with a bang
Maybe better idea is create your new DC and Forrest with different name and try to setup trust between domains, migrate all users to new server and keep SBS as old controller without functionality.
