Outlook Office365 Shared Calendar to auto-accept appointment/meeting date

Sales Manager receives an email from customer with an RFQ and need by date.
Sales Manager forwards the message to rfq@company.com as a appointment/meeting which is then added to the RFQ calendar for internal review in order to prioritize daily quoting activity for our Estimator.

I would like to setup a shared calendar where forwarded RFQ emails are sent to as Appointments or Meetings for a specific date.
Have those appointments/meetings automatically accepted - the date being when that RFQ is due back to the customer.

Have a general idea in my head... just wondering if anyone has a clean process, so I don't have to trial and error.

Serena,

I created the resource; then in the calendar settings - resource scheduling - added the group of employees who can schedule automatically.
In order to convert RFQ email messages to calendar events, I drag the email onto the calendar, select the RFQ room and invite attendee rfq@company.com

Because it was only displaying the organizer of the meeting, I used powershell remotelysigned to Set-CalendarProcessing -Identity rfq -AddOrganizerToSubject $true -DeleteComments $false -DeleteSubject $false
