Wanted to know how to setup pass-through authentication for our internal use websites and applications.

Examples: Microsoft Teams / Jira / Confluence / Outlook (Office365)

For internal application websites, is it as easy as setting up a GPO?

you could try adding the website to the "Local Intranet" sites in your IE browser.  This automatically allows the use of the logged in users credentials.

this can also be setup through a GPO by modifying User Configuration > Policies > Admin Templates > Windows Components > Internet  Explorer > Internet Control Panel > Security Page Site to Zone assignment.  Add your website and give it a value of 1.

be sure to apply this GPO to the server that the user logs on to
LIke Angelo Anello mentioned, if the apps are internal add the URL's to the local intranet zone is an option? You mentioned Office 365, are you using ADFS?
