Exchange server change vs outlook

Hi,

We are updating the virtual platform and whole server status here. So we are changing the users from one exchange to another soon. webmail address will be the same, only routed to another server. End users have outlook 2010/2016. Autodiscover in use.
In the registry we have autodiscover -> RedirectServers -> our.webmail.com assigned.

Where does locally outlook write configuration?
How this change will affect the end users?
Is there way to remove old configuration via GPO (once) and maybe add another so the end users won't see any difference in the usage?

In the old days there were prf -files which could be created/edited via OCT -tool if I remember correctly and those could be copied via GPO to end users computers. But what to do now?
