Exporting email from Apple Mail on a MacBook Pro

I have a client with a MacBook Pro who is moving to a new email provider for her own domain email (user@abcxyz.com kind of thing).  Her email setup is IMAP.  

I'm much more used to the PC/Outlook environment, so I just want to make sure i've got this straight.

My plan is to export all of her many email folders to a single .mbox file. I want to have my approach confirmed as the right way: I'll export the highest-level folder to an mbox file, and by so doing it will export all subfolders along with it, along the lines of an Outlook export to PST function, correct?

Then, after the switch to the new mail provider by way of changing MX records, I'll import the same .mbox file, and this will cause a transfer of her IMAP email onto her new IMAP server.

Does this all sound right?

CORRECT, as long as you press the OPTIONS button in the export dialog and select INCLUDE SUBFOLDERS

Then add the new email account (I'd recommend you don't remove the old account until the migration is complete) ... then the empty inbox will appear on the sidebar in Apple Mail .. highlight it and IMPORT the mbox file.

The client's email folder display on the left shows the Inbox at the top. But unlike Outlook, there's no account name to locate and export, just "Inbox".  I'm assuming that if I select subfolders, this will include her deleted items, sent items, etc.  True?
