Upgrade to PHP7 on Windows Server 2008 R2

I am currently using PHP 5.6.8 on Windows Server 2008 R2 and IIS. I do not use Apache or Mysql.

How difficult is it to upgrade to PHP 7?

What should I backup?

How hard is it to restore if things mess up?

Any tips, tricks, or hints would be greatly appreciated.
