What image manipulating programs are available on the Mac?

In Photoshop, Corel Photo-Paint and gimp, it's a single operation to convert color to grayscale.

I know nothing about Mac. There may be a built-in tool that does it, but we'll have to wait for a Mac expert to come along with that. In the meantime, I can tell you how to do it with a third-party imaging app called GIMP:
https://www.gimp.org/

It is multi-platform. I use it only on Windows, but here's the OS X link for you:
http://gimp.lisanet.de/Website/Download.html

To do what you want, simply click the Colors menu, then Desaturate. You'll get this dialog:

gimp desaturate
Here's an example with this color PNG:

gimp color
Colors>Desaturate>Average creates this (with compression level 5):

gimp bw compression5
