On a network there are VoIP phones, the workstation are connected through the phones.
Is it possible to create a Vlan for the phones and a VLAN for the other devices?
I will enter the phones MAC address , and that list of MAC will have their own VLAN. all other devices will be on a different VLAN.
if yes how do I accomplish that?
( I want to use Sonicwall)

Yes, you can create either a VLAN (Virtual Interface) or just another LAN. However, you cannot do assignment by MAC address to VLANs. You will need a smart switch in order to do that. You can use the OUI from the phones in order to do automatic assignment to the correct VLAN. But like I've mentioned, that would be at the switch level.

that is done at the router/switch level in your QOS policies
What you can do for the quality assurance is to reserve bandwidth by LAN using Bandwidth Management. Here's an article to provide some assistance: https://support.sonicwall.com/kb/sw6076
However, you can do QoS like David has suggested as well.
As far as detection by device, go with the suggestion I provided in utilizing the switch. What type of switches do you have now?
