Copy user profile
I have a user who has lost critical files from their profile.
I have a backup copy of the server disk which I have attached to the server and can access it's contents. There I can see the user's profile folder.
How can I copy their folder from the backup disk and replace their current folder?

you can extract the backup partially also . when you try to extract the backup you will get the option to select which folder you want to extract . select the folder and extract it to any temp location

I see the user profiles exist on the terminal server but are not being saved back to the SBS2011 box when a user logs out. Accordingly when the SBS box is backed up the profiles are not being included...

Is your backup contains user profile?

Backup contains the contents of the SBS2011 box however the users login to the terminal server. The user profiles are on the terminal server only and I would like to have them written back to the SBS box when the user logs out so they will be included in the backup.
access the terminal server using unc path like
\\terminalserver\c$
\\terminalserver\d$
where ever USERPROFILE available and copy and paste in your source machine
