how do i stop exchange 2010 sending attachments as winmail.dat

This is caused by exchange sending a HTML email to a mail server that doesn't gandle html very well.
For this recipient, send them a rich text or plain text email. This should fix the issue.

Long term, you can create a contact for this user and set the default email type to rich text for this user only.

You could try clearing the autocomplete cache.  This has worked for me previously.
