I have not tried it, but I think you can. iPhone, Settings, Calendar and add an account for another calendar.
@John, I think she wants to be able to manage the calendar that is on the phone.
@Christian, You do not need to have access to the phone as long as you have access to his mailbox via outlook as a delegate or rights to his calendar, you or him should see the updates.
First, is the mailbox on exchange?

That is why I suggested Calendar settings on the phone. That might work.

The executive assistant has full access to her managers calendar in Outlook 2016.
My question is really if its possible for her to see his calendar on her iOS device as she would in the Outlook 2016 desktop client.
I cant add the additional calendar on the iPhone via Settings, Calendar and add an account because she wouldn't have her bosses password, and she couldn't use her credentials because the Exchange account is already existing.

Oh I see, they want to manage it via their IPhone. I misread what Christian posted.
One account on iPhone can only have one Calendar. I do not see any option for more under one single iPhone Account.

Correct, I guess there are some execs that require the "extra babysitting" on weekends and after hours and the assistants need visibility when not in front of a PC.
