International targeting in webmaster
if I have a website which targets its content for a specific country and that website is having atleast 5-6k traffic for that specific country from google , and now I want to change the target from a specific country to international targeting then how it will going to effect on SEO and what difference it will make on the organic traffic?
Points to note:
1. website is having new content every day, means the website is updating daily.
2. Site is having 5-6k traffic daily only for specific country.
3. site can be a movie website or a news website.
4. site is having backlinks from 5-10 low-quality domain.

If you just "undo" the localization in Google Search Console, you probably won't see that much of an improvement immediately and depending on your content / keywords / authority may or may not have much of an impact overall. A couple things that could impact this:
generic vs cc tld
If you're using a cc tld, you likely won't show up in any other countries regardless of your targeting in search console
languages / localization
You need to make sure to localize languages (such as British English vs American English). This isn't critical but it will help you.
If you setup different folders or subdomains on your site, such as /us/, /ca/, /uk/ etc, you can setup hreflang and Google webmasters to better target international audiences.

If you change target country in Google Webmaster Tools, It will mostly affect local searches or how it is served to country-specific Google search page.
If it's a news website, it will surely affect the target country since most news can be local-centric. If it's a movie site, it might not be as drastic as the news website.
Bottom line is: yes, there will be changes on the traffic (organic channel) if you change the target country.
