google play services is restarting

Just backup your data.
Goto Settings -> Backup and Restore

As cache partition is separated from your data and files in the storage, it is safe for your data and settings when you wipe cache partition on Galaxy S7 and Galaxy S7 edge.
In other words, your files, settings, apps will NOT be affected when clearing cache partition.

Can I do a single wipe instead of a double wipe to keep data?

Find and tap on Settings.
Touch Applications and then Application manager.
Swipe to ALL tab.
Find and touch Messages.
Tap Storage.
Tap Clear cache and then Clear data, Delete.
After doing this procedure, open the Messages app and then compose a message and send it to your own number just to see if the error shows up or triggered.
It may be the only procedure you can do to fix this problem, however, if the error still pops up, then the next step might help.

Third-party apps have a tendency to mess up pre-installed ones that’s why it’s imperative that as early as now you isolate the problem to know if one or some of your downloaded apps is causing the problem. Press and hold the Power key.
As soon as you can see the ‘Samsung Galaxy S7’ on the screen, release the Power key and immediately hold the Volume Down key.
Continue holding the Volume Down button until the device finishes rebooting.
You may release it when you can see ‘Safe mode’ in the bottom left corner of the screen.
After the phone has successfully rebooted in this mode, compose a text message and send it to your own number to try to trigger the error. I dont want to do a double wipe (which would probably be easier than me learning steps)
I do not understand alternatives and I am stuck at a step

I went to settings
apps
clicked on the app
storage
clear data
clear cache
and that stopped the app crashing for a while
and then the crashing comes back after alot of activity
I repeat and it works again for a while

my phone is not unlocked and I think I would get viruses if I install

Your Samsung S6 is updated to Android OS 7 from Android OS 6. It is common to have Google Play Services error for a major OS updated. The only solution which is permanent is a factory reset and reinstall all apps.
