Update / Replace DC (Server 2008r2) with new DC (Server 2016)

I have a domain with two DC's both running Server 2008 R2.
DC1 have following roles: ADDS, ADCS, DFS, DHCP Server, DNS Server, NPS
DC2 have following roles: ADDS, DFS, IIS, DNS Server, WSUS

Now I'm planning on replacing these two DC's with new ones but I'm hesitant to have all these roles on the new DC's, specially ADCS, NPS and WSUS.

How would you guys tackle this?

Worth noticing is that I have more than enough resources in my cluster to have one server for each role, but I think that's a bit over the top, and also kind of expensive :)

I tend to agree with Cliff Galiher and keep the DC's "clean". I'm thinking of adding the DNS and DHCP servers to both of the DC's to save the client some licensing costs.

ADCS is just for issuing certs for the company's WIFI and i think one more service (new client). Perhaps setting up 3 new servers, two DC's and another server with the rest of the roles?
I'm sure when Cliff mentioned keeping DCs "clean", he also meant to run DNS on them (though not explicitly stated).  AD is very much tied to DNS for its functionality, and in the majority of scenarios you want your DNS zones to be AD-integrated, something that can only be done when DNS is running on a DC.
Both inputs from myself and Cliff are equally valid, no reason to just award points to one.
