office 365 migration - upload emails that came in after initial upload

I used the office 365 Hybrid migration and am about to start migrating mailboxes. DNS  MX records are still pointing to on-premise Exchange.

Once I start uploading mailboxes, new email will still be coming to on-premise exchange.

How do I handle new emails that have come to mailboxes that have already completed the migration?

When you migrate the mailbox MU would
Be create in on premises and target address would be set pointing to your cloud hence mail flow should not stop.

Sorry, I am not sure what mean.  Not sure what MU is.  Is there a link showing the process? I can't find one

MU is mail enabled user you can migrate one user and test it . It should work fine unless you don't want to decommission your exchange on Prem now
Sorry, I may be missing something obvious. This is an example of my migration.
I am going to migrate 50 mailboxes.
I'll start the migration Sunday morning. By Sunday afternoon mailboxes 1 - 5 may be completely uploaded and mailboxes 5  - 50 are still uploading.  
By Sunday evening mailboxes 6 - 10 have completed uploading and mailboxes 11 - 50 are still uploading
By Tuesday all mailboxes have been migrated to Office 365.
Emails that have come into mailboxes 1 - 10 on Monday and Tuesday are still in the on-premise exchange server.
How do I get those emails uploaded?
Unless mailbox is not migrated to O365 you have still your mailboxes on your On prem server and once migrated it's on O365 so there is no email loss and anything that you need to worry
I am not changing DNS until all mailboxes are uploaded.  After all mailboxes are uploaded on Tuesday evening I will change DNS so all new emails come to office 365 and not on-premise exchange.

Mailbox1 was migrated Sunday. New emails came into Mailbox1 on premise server on Monday and Tuesday.

I need to get emails that came into mailbox1 on Monday and Tuesday uploaded to office 365

Is there a way pull only new emails since the first upload?

I didn't realize it is supposed to create a send and receive connector. That sounds like the solution to my issue however I do not see those connectors in on-premise Exchange.  After searching it looks like I need to create those. Also looks like I need a valid 3rd party SSL for that to work.
That's not a problem when I start the real migration but I am doing a test migration now. I'd hate to pay for a certificate for a test environment.
Looks like my problem was choosing minimal hybrid configuration instead of full hybrid configuration.
