Email is heavy on disk usage and memory (and generally more so than CPU power).

I would get a Server with a modern CPU, 32 GB of memory or more and lots of disk (multi TB drives in a RAID 10 configuration). The goal is to provide lots of space for Email and for Exchange Archiving (so Inboxes do not get too large).

Also consider outsourcing email to a good vendor. This is a mature market that works well. We have no Exchange servers left at our clients and that save gobs of time (= money).

I understand, but Servers tend to last longer than known email requirements so I always tend to make sure there is adequate resources.  Maybe I was a bit heavy on disk, but between 4 and 8 TB total should provide adequate growth.
HP is one good brand you can look for hardware perspective. Below is the link to HP sizing.

Download the sizing tool and enter required data. That should give you the exact requirement.
