Obtain training on Dell DRAC & OpenManage

What training sources are available so I can better learn how to use  Dell Remote Access Controller (DRAC) & OpenManage to manage and monitor Dell servers?

Are there any videos or CBT's available?

Have you considered the option of purchasing a server? Retired servers that still run just fine are available cheap on Ebay, maybe spend $100 or so and have your own device to play with?

Depending on the version of iDRAC the options may differ a little. @ first you need to access iDRAC configuration utility during server POST and configure IP address so later on you can access iDRAC via webbrowesr or other management tools like racadm.
Here is some basic information for iDRAC6 but for recent iDRAC7..9 versions it looks pretty similar:
And great Dell website with a lot of information: http://en.community.dell.com/techcenter/systems-management/w/wiki/3204.idrac9-home

For Dell OMSA here is detailed info on how to install it on microsoft server: https://www.dell.com/support/article/us/en/04/sln170723/openmanage-server-administrator---installation--step-bystep-?lang=en

Yes I already have two Dell servers with Server 2016 installed on them in my lab.

OK, if you  have the two DRACs and OpenManage running, I would suggest you just get your hands dirty and learn with those. This iq not all that complex, and pretty easy to become familiar with.
