It is easy, if you have VEAM and Liceses ESXi you able to backup the virtual machine on the fly, or you able to a sftp server:

Oh definitely if you have veeam, that is the way to go - i would back it up to the recommended SFTP server

Any solution for VMWare ESXi will work, Veeam is a good choice.  If you are not as concerned about the actual VM, ie HA setup, you can just use SFTP built into call manager to backup the configurations.

It depends on your requirements. If you just want to backup the VM and treat it as an image like Dell vRanger backup does that is an option but if you need to be able restore VM config files and guest os files that is another options. What backup products are you currently using in your environment?
