Gathering stats on Skype for Business calls - peer to peer, office to office

I would like to have better analytics of call quality over time. Is there any way to have a server at each site and run a nailed up simulated call between the two and gather metrics like loss, jitter, MOS, latency etc etc? Anything from MS? Other?

Skype for Business Online is what I'm referring to. But if Skype client A in office A calls Skype client B in office B - the UDP traffic at ports 50,000 and higher will pass between those two clients. What I'm trying to find out how well does the network handle this traffic. And I just need more data points to discover if there are times of day or anything else I can correlate quality complaint to.
