Hi Pramod,
Move your database to one server using this command
Get-MailboxDatabase | where {$_.Server -eq "SERVER1"} | Move-ActiveMailboxDatabase -ActivateOnServer SERVER2 -Confirm:$false

Then prevent the database being mounted on the server doing upgrade.
Set-MailboxServer SERVER1 -DatabaseCopyAutoActivationPolicy Blocked

Update the server restart the server and put the autoactivation to unrescricted
Set-MailboxServer EX1 -DatabaseCopyAutoActivationPolicy Unrestricted

Follow the same on second server. Please check this for more details.

My recommendation is to always use the DAG maintenance scripts during patching or other server maintenance on your DAG members. that is what the article says

Yes it is recommended. But it is not that useful. Anyway lets put in maintenance mode.

Good luck.
