Though mail relay will even work with one server, But i would recommend that you should keep at least 2 servers for mail relay to maintain the high availability.<br />

yes you would create an AD account with an external address set to office 365, one its has been synced with cloud you just add the license.

Do we need to keep the on premise as we were told best practice is to create the user on premise then migrate to 365<br />
Also am i correct in thinking that if the 2 servers in our on premise DAG went offline it will not affect mailboxes or mail flow as all users now migrated to cloud?
