Emailed recipient seeing "Full Name" (from my contacts = what I called them) not their "File as" name.

Outlook  2007 connected to exchange

When I send someone an email their outlook is sending "Full Name" not their "File as" name.
This wasnt the case when I was just using Outlook as pop

Anyway to have the recipient not see their "Full Name" and see their File name instead?

Reason - Ive named people what I remember them by

"Full Name" Paddy-Plumber
File name as - paddy

its more personal that way.  I dont want them seeing what I amended their name to
