Adding and setting the default printer using group policy

I have deployed several printers via a GPO (computer configuration\policies\windows settings\deployed printers). The policy is a computer policy.
How do I make one of those printers the default for whichever user logs in to that PC?

Do you want to have different users have different default printers?  If so you should be able to create GPO's at the user level and assign whatever printer that user needs.  It would be under User Configuration, Preferences, Printers.  When you create the shared printer, you should be given the option to set it as a default printer which you would then assign to the OU the user(s) who you want to have that printer assigned to as their default.  This will allow the user to always print to their default location printer no matter where in your building(s) they log onto a PC.
