VMware Converter is the tool to use. VMware Converter supports Ubuntu 14.x.

Use p2v for complex systems - many users + databases + complex/spaghetti code.

For simple projects, like one WordPress site or custom flat file project, I normally just create a new runtime environment, in your case VMWare Esxi 6.5, then just copy the project to the new runtime environment.

Citrix Xenserver lets you export a VM as an OVA, you can deploy an OVA into VMWare ESXi using the management interface.
