google privacy settings on android

when I factory reset and started up android7 samsung galaxy 6

google asked me if I want to back up my information to google

I like that I could easily restore all my apps with one button click

but I do not want google to store all my call history

Is there privacy settings I can check off

Call history is not included in these backups. It's a VERY VERY VERY basic restore, almost ALL apps are re-installed as new.
The only thing you may notice is that you don't have to fill in all your wifi passwords again, but that's basically all that's backed up. Just a list of apps, and your wifi list.

Agreed.

If you enable this setting, all new contacts will be saved at Gmail contacts.

If call logs can be synced to the cloud like iPhone, why users will download and sms backup and export app which can export both sms and call logs.
