Duplicate Server2008R2 live operating system

My client has a single Server 2008R2 machine. Boot drive is operating system only... a mirrored drive set that is getting full. There is also a RAID 5 array with all of their data. This drive is fine and has plenty of space left. There are open slots in the controller so I installed a pair of larger drives and mirrored them to replace the old boot drive (C:\). What is the best way to copy/image/mirror/whatever the original operating system to the new drive(s) making them bootable and with the least effort? I can take the server down on the weekends if necessary. There is no VM involved at all. New drives are installed and mirrored but I have not yet configured them as a volume. Is there a particular piece of software that will handle this?

Or use Veeam Agent for Windows free version.  Backup whole server to network share or  USB drive. Then create recovery media. Boot server from it and restore data to new mirror set.

I have ended up  using a trial of EaseUS to accomplish this. Have run a couple of test clones. Have to resolve one issue and it will be finished.
