Creating a sub domain

I have a domain contoso.com lets say, the email is on exchange. I have a gsuite setup and I need to use some aspect of contoso.com for that domain. Can I create LT.contoso.com and use that as a completely separate email domain e.g joe@lt.contoso.com?
Will this work as I am told it cannot be done the sub domain can only use the parent domains MX records

No, your MX records apply to the primary domain in your case what ever the MX records are set to for contoso.com would apply to lt.contoso.com

I don't know anything about GSuite or how it might affect things, but in general, yes it's certainly possible to have separate MX records for a parent domain and subdomain (I've done it).
