How to address changes to OPutlook meetings when the Organizer has left company

We are using office 2016 Outlook client with office 365.
An Administrative Assistance that set up multiple meetings as the organizer has left our company.
We need to modify one or more of the meetings which she created and thus the organizer.
I know this has been an issue with MS Outlook for some time.
Does anyone have any options to address this, such as a way to change the meeting organizer?

If her user account/mailbox still exist, you can login with it and make the changes. Otherwise is best to just remove/recreate the meetings.

You can Assign full rights to person mailbox in Mailbox Delegation, then connect to his mailbox in your outlook and you'll able edit callendar and make any changes.

to clarify, the person has left the company AND her Account and Mailbox has been deleted.
I am trying to find out if Microsoft has addressed this type of very common issue by having some way to change a meeting organizer.
