Need to extract emails from a users email in exchange 2013

Hello,
I need to extract a users emails pertaining to a certain subject matter from their exchange 2013 email.
How can I get this information from the exchange database and if I can get it, how would I save the emails so that other people can review them?
This is kind of important so I need to do this as quickly and as easily as possible.

I wear a lot of hats...

"The solutions and answers provided on Experts Exchange have been extremely helpful to me over the last few years. I wear a lot of hats - Developer, Database Administrator, Help Desk, etc., so I know a lot of things but not a lot about one thing. Experts Exchange gives me answers from people who do know a lot about one thing, in a easy to use platform." -Todd S.

You will need to use the Exchange console to execute a search for the content you are trying to find, then delete it using the -deletecontent parameter.

You can do an e-discovery for exchange 2013 and save the results to a .pst.

Your best bet is to use the search-mailbox command. You can run it against all mailboxes by doing a get-mailbox and piping it to the command like so:
Get-Mailbox | Search-Mailbox -SearchQuery 'keywork' -TargetMailbox "Discovery Search Mailbox" -TargetFolder "Folder in mailbox to copy to" -LogLevel Full.
You can also use the In-place Discovery and hold function in the ECP under Compliance management
