I have 5 Server 2016 servers that need to be protected with Symantec antivirus.

Check Symantec licensing for multiple years.
Often buying 6 for 3 years, might qualified for discount..
The above deals with Symantec endpoint ...
Not sure whether Symantec AV can be purchased as a business versus as individual retail...
The site if not mistaken has a chat for sales option, try that to see what options they can offer.

I am uncertain whether Symantec Anti-Virus is offered in that way,

My suggestion is to contact symantec  if that is the product you want, get your questions answered and then determine whether the price they offer can be matched elsewhere,

Symantec Anti-Virus is Symantec Endpoint Protection if you are buying it for use in a corporation (not for personal use).

Why?

Symantec classifies customers of small to midsize companies into band which is derived from the number of nodes ordered in a single transaction.

A node is a unit of licence acquired per device per licence duration in term of year(s).

If you have 5 devices and bought your licence is for 1 year, the number of nodes are 5 x 1 = 5.

If you have 5 devices and bought your licence is for 3 years, the number of nodes are 5 x 3 = 15.

Besides, Symantec will not directly deal with you to discuss the price and you need to contact their authorized distribution partners in your geographical region. Only direct sale is available for Norton products (personal use).

The more the nodes, the cheaper will be the unit price according to the number of nodes required for different bands of customers.

Band A: 1 to 24 nodes
Band B: 25 to 49 modes
Band C: 50 to 99 nodes
Band D: 100 to 249 nodes
Band E: 250 to 499 nodes
Band F: 500+ nodes

The unit price for Band F will be the cheapest whereas the same for Band A will be the highest.

However, in your case, buying 6 for 3 years will only get you 18 nodes and you are still in Band A. You need to move to Band B (buying more nodes) for a better price.

Symantec does have an inside sales group with whom you can deal, commonly, authorized distributors often have more latitude to offer discounted ...

Or at least they had, they had a chat option to talk to a sales rep

I recalled receiving calls from Symantec when our licence would expire soon, but just one to two calls and no mention of pricing information.

If memory serves, they do not mention pricing unless you effectively indicate that you are ready to buy, and then .......they provide options/pricing.
