Forgot iPhone encrypted backup password

For some weird reasons, I have forgotten my Iphone Backup Password (Itunes) - It is encrypted.

I tried few ones I have but none worked...

So I deleted my backups , and removed completely everything related to Apple (Bonjour, Apple, Itunes...) ALL of it.
I restarted my PC, reinstalled Itunes, and to my surprise, it again asks for the password !!! (It is ticked by default !!!)

How do I completely clean my PC and restart over with Itunes ?

Try to Uninstall in this order:

Use the Control Panel to uninstall iTunes and related software components in the following order and then restart your computer:

1.iTunes
2.QuickTime
3.Apple Software Update
4.Apple Mobile Device Support
5.Bonjour
6.Apple Application Support (iTunes 9 or later)

Restart and Reinstall iTunes.

Important: Uninstalling these components in a different order, or only uninstalling some of these components may have unintended affects.

I did exactly the steps except Quicktime that is not installed on my pc.

When I re-installed and linked my Iphone, I got this image.
Clicking on Encrypt this backup to remove it asks for the password that I don't remember.

There is no way to recover your information or turn off Encrypt Backup if you lose or forget the password.
Doesn't look good.  Your last resort would be to contact Apple and see if they have any way of helping you fix this.

Im not looking to restore my data.

All I need is to restart fresh and res start making a backup of my phone.

I dont need the backup stored. I have my phone that has all the info.
All I need is to be able to deete the backups on my PC and reset a new password for the backup amd then start making backups.

Click on Back up now to replace new Back up on the old one.

I did , and it is backing up , but when it is done and I try to simulate to restore, it asks for the Password !!!

Remove the tickmark of Encrypt iphone backup befor starting backup.

I'm agree with Kyle to contact Apple support.  there are also some third party software like  iTunes backup password recovery to help you get rid of that Backup.

If you don't need your old backup, you can just delete it and create a new one with a new password.  Open iTunes.  Open iTunes Preferences.  Select devices.  Select your device backup and delete it.  You can then create a new backup.
